At Altaglio we make gourmet pizza al tall, not fast pizza. Our dough is hydrated at 90% — a very high ratio that very few pizzerias work with — and ferments slowly for hours to develop flavor and an open, airy crumb. The result is a base that's light and crisp on the outside, tender inside, and much easier to digest than a traditional dough.

Altaglio was founded in 2013 by Joana Jornet Tomás, Judit Abella's mother. In 2018, Judit took over the business and has been its manager ever since — turning a small pizza-by-the-slice shop into a well-known restaurant in Salou.
Judit is married to Nelson Borrás, a partner in the business and head of the kitchen: he's the one who prepares our pizzas and the rest of the menu every day.
In 2024 we carried out a full renovation of our premises, with a new activity license, to offer an indoor dining room, terrace and complete table service.
We have a team of waitstaff and kitchen staff who look after you in the dining room and terrace every day, so all you have to do is sit down, choose from the menu and enjoy.
Besides our restaurant, the Altaglio team also runs a food truck that takes us to festivals and events across the area. The whole business operates under Altaglio Franchise SL.
